Great comfort food dish....
for two people:
1/2 lb baby scallops
3 large handfuls fresh spinach
1/2 can black beans
1/4 cup dry rice
garlic
butter
salt & pepper
- cook 1/4 cup dry rice in 1/2 cup water, simmer 20 min
- steam spinach in frying pan for 2-3 min, add a little butter
- heat up can of black beans, add lime juice, garlic, and some more spices (can't remember exactly :)
- grill scallops on high heat with butter for 1-2 min each side
- serve beans on rice, scallops, and spinach... eat.

Grilled Salmon and Steamed Broccoli

- steam broccoli
- season salmon with salt, pepper, olive oil, cayenne pepper
- toast sesame seeds in frying pan for 3-5 min
- cook salmon on mid-high for 3-4 min each side
- put sesame seeds on broccoli, eat

Gnocchi, Goat Cheese, Baby Tomato, Pesto, Mushroom

olive oil
- saute the gnocchi in a small amount of olive oil on low heat for 7 or so minutes, turn it up to high add mushrooms, and get them crisp.
- add baby tomatoes and cook another 1-2 minutes
- add pesto, serve with goat cheese on top & paramasen if desired, eat.

Fettuccine in mushroom, sun dried tomato basil cream sauce & baked potato slices

- cut potato into slices
- toss potatos in tbsp olive oil, dried cayenne pepper, garlic salt, pepper, dried rosemary
- spread out potato slices on baking sheet
- bake for around 20-30 min, broil at end if not crispy

- cook fettuccine until al dente
- in hot pan add a little olive oil, mushrooms and garlic, saute until mushrooms have color
