1/4 cup white rice (dry)
2 big handfuls of fresh spinach
mushrooms
onion
garlic
butter
salt and pepper
olive oil
grated parmesan cheese
- cook rice with 1/2 cup water for 20 min
- in hot pan, add olive oil, garlic, onion, mushrooms, saute until brown and slightly sticking to pan
- remove veggies and add spinach to pan with a little butter, wilt down
- put paramesan cheese on veggies, a little butter on rice if desired, and eat
